Novelty: a method is disclosed for the production of brined white cheese either with use of stainless stackable trays and stainless pallets-cisterns or with use of stainless pallets-cisterns only. Constitution: a stackable tippable dry-salting tray 1 characterised by suitable depth, reinforced angles 2 and sides the three of which are tight; a soft cheese maturation and storage pallet-cistern 3 having reinforcements at the ends 4 and being sealed up with a separate perimetrically reinforced cap 5 and a cavity 7 receiving the sealing elastic 8 provided with the brine replenishment aperture 10, the brine level indicator 9, the sampling valve allowing the use of a syringe and a perforated sheet iron-spacer 11. Sealing is obtained via special clip-type closure means 12 or an eccentric blade. The pallet-cistern bears a base of hollow steel sections 13 for stacking purposes. The reinforcements and the base are of closed completely-welded sections. The traceability of the pallet-cistern is achieved with use of a tag whereon all cheese data are electronically stored up. |
