A starch product, suitable for use as a food, consists of gelatinized potato starch in the form of small pieces which are insoluble in cold water and only swell to a limited extent when heated in water, and is prepared by heating to a temperature above gelatinization point and simultaneously drying a layer, which, after drying, has a thickness of 1-2 mm., of a mixture of starch and water, the temperature of treatment being such as to destroy the granular nature of the starch and to cement it into a mass which is subsequently comminuted. Specifications 603,074 and 607,827, [both in Group VI], are referred to. The Specification as open to inspection under Sect. 91 comprises also the subject-matter of Specification 649,077, [Group VI], and the preparation of thickening-agents for printing-inks by finely grinding the product and heating with a solution of an alkali.
