PURPOSE: A Saccharomyces servazzii KC 244 which produces beta-glucosidase is provided to ensure excellent beta-glucosidase productivity and to be used in the medical industry. CONSTITUTION: A beta-glucosidase-producing Saccharomyces servazzii KC 244(deposit number KCCM 11158P) is derived from Korean kimchi. A method for preparing the strain comprises: a step of inoculating yeast isolated from Korean kimchi to an esculin medium and culturing the same to select a beta glucosidase-producing strain; a step of isolating the selected strain; a step of batch culturing the strain. |
