METHOD FOR PURIFYING RAFFINOSE

PROBLEM TO BE SOLVED: To provide a method for separating and purifying raffinose of tri-saccharide by selectively removing kestoses of the tri-saccharide from a raffinose-containing liquid, such as sugar a beet production process liquid, in which the raffinose and the kestoses are mixed.

SOLUTION: Enzyme treatment is performed by using β-fructofuranosidase derived from Bifidobacterium to selectively decompose the kestoses in the raffinose-containing liquid in which the raffinose and the kestoses being the tri-saccharide are mixed. Thus, the raffinose is simply and efficiently purified.
