PURPOSE: A food composition for enhancing immunity and preventing and treating cancer is provided to improve immunity and anticancer efficacy. CONSTITUTION: A method for manufacturing a food composition for enhancing immunity comprises: a step of refining cocoon or silk waste and removing sericin; a step of washing, dehydrating, and drying the refined material; a step of hydrolyzing the refined material; a step of primarily neutralizing the refined material at pH 9.2-9.3; a step of stirring the refined material to suppress MCPD and DCP generation; and a step of reverse-neutralizing the primary neutralized material.
