摘要 <P>PROBLEM TO BE SOLVED: To provide a method for simply predicting quality of cheese, especially preferably, maturation quality of natural cheese, which is conventionally difficult. <P>SOLUTION: A method for predicting quality of cheese has: a pretreatment process of performing pretreatment of cheese with known maturation quality to obtain an analysis sample; an instrumental analysis process of using the analysis sample for instrumental analysis to obtain instrumental analysis data; and a multivariable analysis process of creating a quality prediction model of cheese, showing relation between the instrumental analysis data and maturation quality to be predicted from the instrumental analysis data by performing multivariable analysis by using the instrumental analysis data on a plurality of pieces of cheese and maturation quality data showing the maturation quality of each of the pieces of cheese. <P>COPYRIGHT: (C)2013,JPO&INPIT
