<P>PROBLEM TO BE SOLVED: To provide a white sauce with an excellent smoothness and lightness while suppressing a dry and crumbling mouth feeling and heavy palate feeling due to a temperature change and aged deterioration, and a method of the same. <P>SOLUTION: In a white sauce with bubbles and method of manufacturing the same, the content of oil and fat is 5% or less and the viscosity (20°C) is 40-100 Pa s, and processed food with bubbles which contains albumen, milk serum and reduced starch saccharified products is mixed with a white source. <P>COPYRIGHT: (C)2013,JPO&INPIT |
