摘要 PURPOSE: A vegetarian meat composition containing walnut, and a producing method of vegetarian meat using thereof are provided to reduce the concentration of gluten in the vegetarian meat. CONSTITUTION: A producing method of producing method of vegetarian meat using a vegetarian meat composition comprises the following steps: mixing 100 parts of gluten by weight, 7-15 parts of walnut powder by weight, 7-14 parts of peanut powder by weight, 20-30 parts of onion powder by weight, 3-7 parts of roasted salt by weight, 2-4 parts of sea tangle powder by weight, 2-4 parts of mushroom powder by weight, and 1-2 parts of beet powder by weight to obtain the vegetarian meat composition; adding 100-130 parts of water by weight into the vegetarian meat composition to obtain dough; and freezing the vegetarian meat dough in a molding frame at 10-20 deg. C below zero for 10-100 minutes. The vegetarian meat composition additionally contains 5-20 parts of dietary fiber composition by weight for replacing fat.
