摘要 PURPOSE: A producing method of radish kimchi powder is provided to enable users to store the radish kimchi powder for a long time, and to easily intake the radish kimchi powder. CONSTITUTION: A producing method of radish kimchi powder comprises the following steps: cutting 10kg of radish into 1.5cm cubes, and salting the cut radish with 375g of salt and 50g of sugar; mixing the salted radish after 30 minutes, and removing liquid from the salted radish after 60 minutes; mixing 20kg of salted radish, 375g of salt, 235g of salted shrimp, 260g of garlic, 100g of ginger, 130g of red pepper powder, 735g of glutinous rice gruel, 215g of Ammodytes personatus sauce, 160g of spring onion, 250g of lemon-lime soda, and 13g of ground seasonings; firstly aging the mixture at 20-22 deg. C for 48 hours, and secondly aging the mixture at 5 deg. C for 7 days; firstly drying the aged radish kimchi at 45-50 deg. C for 12 hours, and soaking the dried radish kimchi in radish kimchi liquid for 30 minutes; secondly drying the radish kimchi at 45-50 deg. C for 48 hours, and crushing the dried radish kimchi; and packaging 500-1,000g of radish kimchi powder in one bag produced with a ht screening material.
