PURPOSE: A noodle composition containing Astragalus membranaceus juice is provided to add the Astragalus membranaceus juice into flour dough for improving excellent antioxidant activity. CONSTITUTION: A noodle composition contains Astragalus membranaceus juice. The noodle composition additionally includes more than two components selected from the group consisting of a Cirsium setidens extract, a Codonopsis lanceolata extract, an Aster scaber leaf extract, or an Acanthopanax sessiliflorus extract.
