FIELD: food industry.SUBSTANCE: invention is related to preservation industry, in particular, to the method of sterilisation of apple compote in jar SKO 1-82-1000. The method involves the compote heating process in a 150°C air flow at a rate of 3.5-4 m/s during 19 minutes with subsequent maintenance during 8-15 minutes in bath with 96°C water. Then the compote is sequentially cooled in baths with 70°C water during 4 minutes, baths with 50°C water during 5 minutes and baths with 30°C water during 6 minutes. During the whole process of heat treatment the jars are turned upside down with a frequency equal to 0.166 s.EFFECT: invention performance ensures significant saving of thermal energy and water, the heat treatment process duration reduction and the ready product quality enhancement. |
