The invention relates to a system for the construction of industrial trays for baking bakery products, formed using a plurality of concave sole piece modules made from a thermo-polymer material, which receive the mixtures to be baked and which include at least one concavity per module. In a main direction the tray, the concave sole pieces form rows with longitudinal edges complementarily adapted to rails comprising metal profile sections resting on cross-pieces and on lateral longitudinal closure members of a metal frame in the form of a grid, said rails exceeding the length of the concave sole pieces by a clearance suitable for the expected expansion of said sole pieces.
