<P>PROBLEM TO BE SOLVED: To provide a method for producing rice flour noodle which produces rice flour noodle according to a conventional general noodle producing method while only rice flour is used as main raw material flour. <P>SOLUTION: In a material preparation step, water is added to the rice flour as the main raw material to prepare mixed raw material. In a kneading step, the mixed raw material is kneaded to form kneaded product. In a rolling step, the kneaded product is rolled to form a noodle sheet. In a slitting step, the noodle sheet is slit to a predetermined noodle string to obtain a unit noodle string. In these steps, the rice flour component is kept ungelatinized state. In a packaging step, the unit noodle string is stored in a bag-shaped heat resisting packaging container, and sealed and packaged to obtain a packaged unit noodle string. The rice flour component in the unit noodle string is kept ungelatinized state. In a heating pregelatinization step, the unit noodle string in the packaging container is heated only once at a temperature equal to or above a predetermined temperature to cause pregelatinization of rice flour component in the unit noodle string, whereby the rice flour component in the unit noodle string in the packaging container is pregelatinized and at the same time bacteria in the unit noodle string are sterilized. <P>COPYRIGHT: (C)2013,JPO&INPIT |
