A cooked, sheeted snack food product, for example fried or baked potato crisps and fabricated snacks, includes a wheat flour comprising waxy wheat flour. A process for manufacture of said product comprises preparing a dough including the wheat flour into a sheet, cutting pieces from the sheet and cooking. The wheat flour may have a gelatinised starch content such that the viscosity of a dispersion of 10 g of the flour in 25 g distilled water at 25°C is at least 200 cP. The waxy wheat flour may be partly precooked or pregelatinised. The product may further comprise potato-derived material such as potato starch, potato granules or low-leach potato flake, and a cereal flour such as common wheat flour. The waxy wheat flour is present in the dough in an amount of preferably 8% to 50% by weight. The snack food product has reduced acrylamide content. |
