PURPOSE: A producing method of herbal baby peach pickle is provided to offer cyanogentic glycoside contained in wasted baby peach useful to human body to eaters. CONSTITUTION: A producing method of herbal baby peach pickle comprises the following steps: preparing unripe baby peach; inserting 100 parts of peach by weight, 30-50 parts of soy sauce by weight, 15-25 parts of vinegar by weight, 30-50 parts of sugar by weight, and 0.10-0.3 parts of herbal nutrients by weight into a jar; sealing the jar to obtain a baby peach fermented mixture; and mixing the baby peach fermented mixture, water, and sugar in a ratio of 1:1:1, and boiling the mixture. The herbal nutrients include Angelica gigas, cinnamon, Glycyrrhizae radix, garlic, and ginger in a ratio of 2:1:1:1:1.
