PURPOSE: A device and a method for controlling a lift type fryer are provided to automatically dip a frying net in an oil tub to start cooking and take the frying net out of the oil tub after completion of cooking by elevating the frying tub according to the state of food being cooked. CONSTITUTION: A device for controlling a lift type fryer comprises a cooking condition setting unit, a temperature sensing unit, a timer for checking the elapse of cooking hours, a motor driving unit(60) including first and second relays for switching the rotating direction of a motor, and a control unit which operates the second relay to rotate the motor reversely and lower a frying net into an oil tub when the temperature measured by the temperature sensing unit reaches a cooking temperature and operates the first relay to rotate the motor forwardly and raise the frying net after the cooking time.
