PURPOSE: An overheating preventing device of a fryer is provided to safely cut off the power of a heater when oil temperature abnormally rises due to a failure of the fryer. CONSTITUTION: An overheating preventing device of a fryer comprises a heater(170), a voltage converting unit(150), a temperature sensing unit(130), a control unit(120), a first switching unit(180), and a second switching unit(190). The voltage converting unit converts commercial electricity into control voltage and output voltage required by the fryer. The control unit outputs a drive control signal for controlling the output voltage supplied to the heater according to oil temperature. The first switching unit switches the supply of the control voltage to the control unit according to oil temperature. The second switching unit switches the supply of the output voltage to the heater according to oil temperature.
