<P>PROBLEM TO BE SOLVED: To provide a novel supercooling accelerator which has excellent supercooling activity, does not depend on extraction from natural material or the like and facilitates mass production. <P>SOLUTION: The supercooling accelerator includes a compound represented by general formula (1) and at least one kind selected from N-long-chain acyl acidic amino acids or salts thereof. In the formula, R<SP POS="POST">1</SP>represents 1-23C hydrocarbon group, R<SP POS="POST">2</SP>represents hydrogen or 1-3C hydrocarbon group, Y represents carboxyl group, sulfonic acid group, sulfate group, phosphate group or salts of them, Z represents -NR'- (R' is hydrogen or 1-10C hydrocarbon group), -O-, or -S-, j, k represent any of 0, 1, 2 and are not 0 at the same time and n represents an integer of 2 to 20.
