METHOD FOR PRODUCING POLYPHENOL-CONTAINING SOAP

PROBLEM TO BE SOLVED: To provide a method for effectively utilizing a highly alkaline astringency-eliminating liquid recovered that is by-produced in an astringency-eliminating process of a raw material originating from an olive.

SOLUTION: The method for producing a polyphenol-containing soap comprises a saponification step of saponifying an oil and fat component by mixing and reacting it with an alkaline raw material comprising a liquid containing (1) the highly alkaline astringency-eliminating liquid recovered that is by-produced in the astringency-eliminating step where a raw material originating from an olive is immersed in an alkaline liquid, (2) a concentrate of the astringency-eliminating liquid recovered or (3) a dilute of the astringency-eliminating liquid recovered.
