PURPOSE: A dough conditioning device capable of improving cooling efficiency is provided to improve the usability of an internal space by re-arranging an operation unit. CONSTITUTION: A dough conditioning device comprises the following: a fermenter main body(110) including an internal space(111) with an opening toward the front side; a door(130) opening and closing the internal space; an operation unit(140) including a cooling device for controlling the temperature inside the internal space; a condenser connected to a compressor for condensing a refrigerant; a cooling plate storing the condenser; a heat-insulation member located in between the condenser and one side of the cooling plate; and plural partition walls(120) dividing the internal space into first, second, and third internal spaces(111a, 111b, 111c) separately controlled by a control panel(150).
