<P>PROBLEM TO BE SOLVED: To provide a technique for securing safety against vapor explosion or the like, paying attention to an intermediate layer not taken into consideration in a conventional art, creating an environment in which natural precipitation of things remaining in deep-frying oil or the like is easy to occur, by inhibiting, preventing, or breaking the intermediate layer by supplying cooling water while preventing the movement of an oil layer, and increasing the efficiency in cooling the lower part of the oil layer. <P>SOLUTION: A method of accelerating precipitation of the things remaining in deep-frying oil, includes specifying the position and flow rate of the supplementary cooling water injected into the water layer, forming a specific flow in the water layer equalizing the draining amount and injection amount from the water layer, inhibiting the generation of a dispersion solution of an oil component and water component generated on a boundary surface between the oil layer and the water layer or preventing the stabilization of a droplet dispersion solution by formation of amphiphilic micelles, and further breaking the intermediate layer formed of the dispersion solution within a specific range, thereby accelerating the precipitation of the things or the like remaining in deep-frying oil, in a fryer in which the oil layer is disposed at the upper part of an oil tank and a water phase layer is disposed at the lower part of the oil tank, based on a difference in specific gravity.
