METHOD FOR PRODUCING SOLID MATTER FROM SACCHARIDE SOLUTION, AND SOLID MATTER

PROBLEM TO BE SOLVED: To provide a method for producing solid matter of a saccharide solution, containing isomaltulose.

SOLUTION: There is provided a method in which an enzyme producing isomaltulose from sucrose is applied to a sucrose solution to obtain an isomaltulose-containing saccharide solution so that solid matter is produced from the saccharide solution, and the method includes: heating the saccharide solution to adjust the solid content of the saccharide solution to be 77-96 mass%; subjecting the resultant adjusted matter to a crystal nucleation treatment by applying a shear force thereto while maintaining the resultant adjusted matter at 65-120°C; and then cooling the treated matter thus obtained.
