<P>PROBLEM TO BE SOLVED: To provide a drying method for good-flavor dried meal of fish having holding flavor components because denaturation or losing of flavor or the flavor components occurs by high temperature heating or freeze processing in time of drying in conventional technology though the dried meal of the fish is used as a seasoning having high flavor. <P>SOLUTION: This method for reducing fish to meal and drying it is a method for producing the dried meal including a process of performing the drying while stirring and cutting the fish as raw material under a vacuum or decompression condition. <P>COPYRIGHT: (C)2012,JPO&INPIT |
