A method for the identification of authenticity of grapevine materials and wines includes sampling for analysis, determination of physical-chemical characteristics and making conclusion on authenticity. Additionally one determines characteristics of quality: Folin–Ciocalteu index, pH, mass concentration of malvidin-3.5-diglycoside, mass concentration of chlorides, mass concentration of potassium, mass concentration of sodium, mass concentration of calcium, mass concentration of magnesium, mass concentration of reduced extract, mass concentration of tartaric acid, mass concentration of malic acid, mass concentration of citric acid, mass concentration of glycerin, presence of odorant and presence of artificial dye. Conclusion on authenticity is made through comparison of those to set ranges of characteristics of quality for grapevine materials and wines that correspond to scores. The sample is considered to be authentic if the sum of scores is equal to 90-100 for white wine materials and wines, 100-110 for red ones, and if the value of quality characteristic goes out of the limits of the range the score is equal to 0. |
