<P>PROBLEM TO BE SOLVED: To provide a pork-bone and chicken-carcass flavor enhancer. <P>SOLUTION: The pork-bone or chicken-carcass flavor enhancer contains: (a) at least 10 wt.% (preferably 15 wt.% or more) of monosodium glutamate; (b) at least 1 wt.% (preferably 1.5 wt.% or more) in the total of sodium inosinate and sodium guanylate; and (c) yeast extract as active ingredients; and (c') 2,5-dimethyl pyradine, 2,3-dimethyl pyradine, 2-ethyl 3-methyl pyradine, 2-furanmethanol, 5-methyl 2-furanmethanol and 3-methyl butanal as active ingredients. <P>COPYRIGHT: (C)2012,JPO&INPIT |
