PURPOSE: A producing method of smoked duck containing a sea tangle component is provided to remove the unique bad smell of duck meat, and to improve the texture of the duck meat. CONSTITUTION: A producing method of smoked duck containing a sea tangle component comprises the following steps: washing duck after removing feathers, the neck, feet, and partial intestines(S10); crushing dried sea tangle, and mixing 80wt% of sea tangle powder with 20w% of water to obtain sea tangle granules using granulator(S20); inserting the duck meat and a curing agent containing the sea tangle granules and other seasonings into a tumbler with a spiral chuck, and rotating the mixture for aging(S30); and smoking and heating the aged duck meat(S40). The seasonings include a meat coloring tenderizer, whey, casein, nitrite, salt, sugar, red wine, sesame seed oil, garlic, onion, monosodium glutamate, red powder, sodium erythorbate, beef powder, purified water, and milk.
