<P>PROBLEM TO BE SOLVED: To provide a dietary fiber composition containing a glucomannan, a xanthan gum, and an alginate. <P>SOLUTION: In the dietary fiber composition containing the glucomannan, the xanthan gum, and the alginate in amounts effective to produce a desired level of viscosity. Further, the invention is provided a food containing an effective amount of the dietary fiber composition.
