PURPOSE: Fermented and steamed rice cake containing yam, and a producing method thereof are provided to improve the nutrition of the rice cake by using the yam and milk. CONSTITUTION: A producing method of fermented and steamed rice cake containing yam comprises the following steps: washing and soaking the rice in water for 10-12 hours, dehydrating the rice using a wicker tray before drying for 5 hours, and crushing the dried rice using a crusher to obtain rice powder; peeling the yam, and steaming at 90-110 deg C for 20-30 minutes; mixing the steamed yam with milk, and grinding to obtain a yam mixture; mixing and kneading the yam mixture with the rice powder, unrefined rice wine, sugar, salt, and water; fermenting the mixture at room temperature for 10-12 hours; steaming the fermented mixture at 90-110 deg C; and sprinkling almond or black sesame seeds as toppings on the obtained rice cake. |
