The present invention pertains to the fish industry, particularly to the production of delicious soft caviar from ovulated sturgeon spawn. The method provides to take ovulated sturgeon spawn obtained from living fish and cleaned from obvious admixtures, to put it in hermetically volume together with liquid from abdominal cavity and heated for 50 minutes in water bath at a temperature of 60±1 centigrade. The spawn after thermal treatment is cooled till 12 to 15 centigrade, washed with cold water, salted and packed up in vacuum. After that the packed product could be thermally treated at a temperature of 60 ±1 centigrade volume response for 100 to 150 minutes and further cooled. |
