FIELD: food industry. ^ SUBSTANCE: invention is intended for usage in food industry, in particular, for apple compote production in jar SKO 1-82-500. The method envisages fruits pouring with 85C hot water for 2-3 minutes, subsequent replacement of the water with 97-98C syrup. Then the jars are sealed, put into the carrier ensuring mechanical air-tightness of the jars, sequentially heated in a 150C air flow at a rate of 5-6 m/s during 3 minutes. Then the jars are showered with 100C water during 15 minutes with subsequent stage cooling in baths with 80C water during 4 minutes, with 60C water during 4 minutes and with 40C water during 5 minutes. During the whole process of heat treatment the jars are turned upside down with a frequency equal to 0.133 s-1. ^ EFFECT: invention ensures reduction of heat treatment duration, enhancement of the ready product quality, saving of thermal energy and water. ^ 1 ex |
