<P>PROBLEM TO BE SOLVED: To provide a method for efficiently producing a branched glucan having a cyclic structure. <P>SOLUTION: The method for producing the branched glucan having the cyclic structure in which part of the branched glucan structure forms a ring includes a step for obtaining the branched glucan having the cyclic structure by: (1) affecting the branched glucan with branching enzyme and with 4-α-glucanotransferase thereafter; or (2) affecting the branched glucan with 4-α-glucanotransferase and with branching enzyme thereafter; or (3) affecting the branched glucan with branching enzyme and 4-α-glucanotransferase at the same time. <P>COPYRIGHT: (C)2012,JPO&INPIT |
