The present invention relates to a method for producing a sugar by saccharifying a cellulose having a cellulose I type crystallinity, as represented by equation (1), of 50% or lower and/or a specific surface area of 180 m2/g or higher, by means of an enzyme formulation, and relates to a method for increasing the quantity of glucose produced, wherein the enzyme formulation contains 20% or more of endoglucanase relative to the total quantity of proteins in the enzyme component, and the cellulose is obtained by pulverizing a cellulose-containing raw material in a pulverizer. Cellulose I type crystallinity (%) = [(I22.6 - I18.5) / I22.6] × 100 (1) (I22.6 denotes the diffraction intensity of the lattice plane (002 plane) (diffraction angle (2?) = 22.6°) and I18.5 denotes the diffraction intensity of the amorphous portion (diffraction angle (2?) = 18.5°) in X-ray diffraction) |
