PURPOSE: A beverage composition with improved stability is provided to prevent the browning of a beverage using the composition and the precipitation generated by the reaction with bivalent mineral ions. CONSTITUTION: A beverage composition with improved stability has the calorie ratio rate of a carbohydrate source, a protein source, and a fat source of 15-70:7-40:10-50, and has the pH of 6-7.5. The beverage composition contains 0.015-0.2wt% of bivalent metallic ions. The protein source contains 20-100wt% of soy protein isolate, 0.005-0.05wt% of gellan gum, and 0.05-0.35wt% of crystalline cellulose. The bivalent metallic ions include calcium ions, magnesium ions, copper ions, or zinc ions.
