PURPOSE: A producing method of Chinese noodles using rice flour is provided to maintain the same quality of the Chinese noodles using starch as a main material, when using rice flour as a main material. CONSTITUTION: A producing method of Chinese noodles using rice flour comprises the following steps: washing rice, and drying the washed rice(10, 20); crushing the dried rice into the rice flour(30); mixing 2.5kg of rice flour with 1.1kg of water, 10g of salt, 500g of starch, and 10-20g of sodium bicarbonate power to obtain dough(40); extruding noodles with the obtained dough using a noodle extruding unit, after heating the dough at 100-135 deg C(50); and drying the extruded noodles(60).
