<P>PROBLEM TO BE SOLVED: To provide a highly safe new flavor improver and/or pH adjuster of alcoholic beverage, easily and effectively improving the flavor/taste/acid taste of alcoholic beverage only by adding it to alcoholic beverage. <P>SOLUTION: This flavor improver including fucoidan derived from Nemacystus decipiens as the active ingredient is added to alcoholic beverage at a prescribed amount (for instance, 0.0001-15.0 w/v% as fucoidan derived from Nemacystus decipiens) so as to easily and effectively improve the flavor/taste/acid taste. The flavor improver enables especially unpleasant smell reduction of alcoholic beverage, favorable flavor enhancement, maturing feeling impartation, taste enhancement, acid taste reduction, and adjustment of solution pH. <P>COPYRIGHT: (C)2012,JPO&INPIT |
