PURPOSE: A method for preparing dried persimmon is provided to be storable for a long term at a room temperature without aggregation by containing proper moisture and to be applied to various food fields including bread, rice cakes(tteok), noodles, sweet jelly of red beans, and chocolate. CONSTITUTION: A method for preparing dried persimmon comprises: a first step of slicing the persimmon after removing the seeds and stalk from washed persimmon; a second step of drying the sliced persimmon at a vacuum state and pulverizing the persimmon; and a third step of obtaining persimmon powders after drying the pulverized persimmon using hot wind and sieving the dried persimmon. In the second step, the sliced persimmon is dried in a decompression condition of 3_7mm Torr. |
