PURPOSE: Fish cake in a fish shape containing fruit extracts, and a producing method thereof are provided to remove the fishy smell from the fish cake, and to improve the taste and the texture of the fish cake. CONSTITUTION: A producing method of fish cake in a fish shape containing fruit extracts comprises the following steps: mixing raw materials for the fish cake, and stirring the mixture into a fish flesh paste state to obtain a fish cake raw material mixture; preparing the fruit extracts; inserting 1~7wt% of fruit extracts into the fish cake raw material mixture to obtain fish paste dough containing the fruit extracts; molding the fish paste dough into the fish shape, and heating the molded product before frying; and sterilizing the obtained fish cake and packing. |
