PURPOSE: A method for cooking black goat meat with mulberry leaf extract is provided to soften the black goat meat while removing bad smell of the meat by aging the meat in seasoning liquid manufactured by mixing the mulberry leaf extract, soy bean paste, garlic, hot Capsicum annuum, and ginger etc. CONSTITUTION: A method for cooking black goat meat(3) with mulberry leaf extract comprises the following steps: aging the black goat meat in seasoning liquid by adding the mulberry leaf extract, soy bean paste, garlic, and ginger etc in the seasoning liquid; cutting the aged goat meat; applying soy sauce on the black goat meat; and roasting the black goat meat.
