The invention relates to composition of soybean pulp, which comprises lipoxygenases 1, 2 and 3, which comprises more than 10 % of linoleic acid from the general content of fatty acids and less than 20 µg/g of general 2,4-decadienal, plus hexanal, plus hexanol per gram after oxidation in mild aqueous conditions and has improved organoleptic properties. The invention also relates to methods for obtaining soy compositions with improved organoleptic properties and obtaining plants which produce soybeans with slight smell. |
