<P>PROBLEM TO BE SOLVED: To provide a gel-like food for desserts, which includes milk as the main raw material and is abundant in nutrition with use of no coagulant. <P>SOLUTION: The food for desserts, which has excellent flavor, texture and nutrition value, is obtained by making pasteurized milk into a gel-like state using a milk-clotting enzyme by a simple production method. <P>COPYRIGHT: (C)2012,JPO&INPIT |
