<P>PROBLEM TO BE SOLVED: To provide a method for producing a polysaccharide thickener which has high thickening properties in a small amount, causes a small change in the viscosity due to temperature rise and a small change in the viscosity with time at high temperature, and is excellent in emulsion-dispersion stabilization. <P>SOLUTION: A polysaccharide comprising fucose, glucose, glucuronic acid and rhamnose as constituent monosaccharides is heat-treated at 60-180°C in an aqueous alkali solution whose pH is ≥8, and it is cooled under stirring with a stirring blade whose tip speed is kept at a slow rotational speed of ≤2.0 m/s without strong stirring, or it is cooled by being passed under pressure through the inside of a corrugated tube externally cooled with a refrigerant without applying shearing force by stirring. <P>COPYRIGHT: (C)2012,JPO&INPIT |
