Disclosed areβ-amino acids that are unsubstituted in theβposition; that are substituted in theβposition with an aryl group; that are substituted in theαposition with an aryl group; that bear two substituents in theαposition; and/or that are substituted in theαandβpositions with groups which, together with the carbon atoms at theαandβpositions, form a ring. Also disclosed are methods for making the above-mentionedβ-amino acids and otherβ-amino acids which involve providing anα,β-unsaturated imide; converting theα,β-unsaturated imide to a 2-substituted-isoxazolidin-5-one; and converting the 2-substituted-isoxazolidin-5-one to aβ-amino acid.
