The present invention relates to a method for extraction of maslinic and oleanolic acids and hydroxytyrosol from olive-dressing solutions, which comprises the following steps: a) flocculation of the olive-dressing solutions to obtain a flocculant and water; b) solid/liquid extraction and drying of the flocculant obtained in step a); c) extraction of the flocculant from step b); purification of the extract obtained after step c); and e) liquid/liquid extraction of the water obtained after steps a) and b).
