PURPOSE: A producing method of persimmon concentrate, and a persimmon beverage using thereof are provided to prevent the decrease of marketability of the persimmon beverage using persimmon softened during a storage process. CONSTITUTION: A producing method of persimmon concentrate comprises the following steps: juicing persimmon after removing the stalk, the skin, and seeds; adding water into the obtained persimmon juice; adding glycosidase into the mixture for decomposing sugar from the mixture; enzymatically reacting the mixture using fungamyl, amyloglucosidase, viscozyme, spezyme; adding aspergillus oryzae strains, and sericite with the mixture before aging for 10-20 days; adding alcohol to the obtained enzymatic reaction liquid before heating, and filtering to obtain filtrate; and concentrating the filtrate. |
