NON-TOXIC NEW MICROBES HAVING INHIBITORY ACTIVITY GROWING FOR BACILLUS CEREUS AND SAUCE INCLUDING THEM

PURPOSE: A novel Bacillus licheniformis with an activity of suppressing Bacillus cereus proliferation is provided to produce polyglutamate and to be used in chunggukjang. CONSTITUTION: A Bacillus licheniformis SCK 121057 strain(KCCM 11052P) suppresses Bacillus cereus proliferation. The strain is non-toxic. The strain produces polyglutamate. Jang(Korean pastes) contains the strain. The Jang includes mixed soy sauce, Korean soy sauce, red pepper paste, seasoned red pepper paste, or chunggukjang(fermented soybean paste).
