摘要 <P>PROBLEM TO BE SOLVED: To provide a process for making brand-new Worcestershire sauce excellent in the taste and physiological activity such as antioxidant activity; and Worcestershire sauce obtained by the same. <P>SOLUTION: In the process for making Worcestershire sauce, basidiomycetes having cellulase activity are inoculated into a mixture liquid of Worcestershire sauce materials with vegetables and fruits as main materials.
