The gap 30a is adjusted so that during at least one portion of an initial stage of the cooking the gap 30b is less than the nominal initial uncooked thickness of the food product 80 and during at least one subsequent stage the gap 30c is increased so that it is greater than the smallest gap 30b in the prior stage but is still less than the nominal initial uncooked thickness of the food product 80.
