Disclosed is a wafer comprising: at least 30% of a whole wheat flour on a dry weight basis; and a protein isolate. Also disclosed is a method of producing a food product, the method comprising: producing the said wafer and distributing the produced wafer, the produced filling composition, or a combination thereof to a consumer or distributor.
