PURPOSE: A long term preservation method of kimchi at room temperature is provided to preserve the kimchi without adding additives or treating the kimchi with radiation rays or heat. CONSTITUTION: A long term preservation method of kimchi at room temperature comprises the following steps: adding 1-10wt% of sugar solution into 90-99wt% of aged kimchi, and fermenting the mixture in an anaerobic fermentation condition; separating liquid from the aged kimchi; adding 2-20wt% of sugar solution into 80-98wt% of kimchi liquid, and fermenting the mixture in the anaerobic fermentation condition; and pouring the fermented liquid back into the kimchi. |
