METHOD FOR PRODUCING HETERO DISACCHARIDE, CHITOBIOSE, AND DI-N-ACETYL CHITOBIOSE, AND THEIR APPLICATIONS

PROBLEM TO BE SOLVED: To provide a method for efficiently producing a hetero disaccharide, which is expected to be a biologically active substance, from chitin, and its application; and also to provide a method of producing chitobiose and di-N-acetyl chitobiose from the hetero disaccharide.

SOLUTION: The method is for producing a hetero disaccharide in which the side of a non-reducing terminal is D-glucosamine residue and the side of a reducing terminal is N-acetyl-D-glucosamine residue. The method includes a deacetylation process to deacetylate chitin partially, and a chitin hydrolysis process to hydrolyze the partially deacetylated chitin with an acid.
